I’m starting my vegan 30-day trial on Sunday, so meanwhile, here are some pre-trial eats.
Breakfast –> some lovely overnight oats.
Ingredients:
- plain fat free yogurt
- rolled oats
- frozen berries
- 1 tsp of chia seeds
Left in the fridge overnight. It gets so thick, the spoon stands up! And some coffee with skim milk.
In the morning topped with peanut butter granola!
For lunch, a green monster…
Ingredients:
- 1 cup almond milk
- a dash of skim milk
- 1 cup of spinach
- 1 banana
- 1 tsp of peanut butter (for protein)
- 2 ice cubes
This was fantastic. Next time I will add a couple of more ice cubes though to make it colder.
For protein – egg whites omelet with mushrooms along with couple of slices of bread with hummus (not shown). Today is my last day eating animal protein for a while.
